Spicy Eggplant


Ingredients:

EVOO or Vanilla Oil
3 Large Sweet Onions
1 Roasted Red Pepper in oil
2 Medium Eggplants
5 Peeled garlic cloves
1Tbsp Red Pepper Flakes
Salt
Pepper
Smoked Paprika

Directions:
Peel 2/3 of eggplant skin off.  cut into cubes (large whacker).  toss in oil, salt and pepper and place in air fryer (425 for 22 minutes in mine but mine takes longer than smaller ones). Take the garlic cloves plus a bunch of extra for other things down the road and place in foil with some EVOO. Close up into a pouch and place in the air fryer with the eggplant)

Slice onions, place in pan on medium heat with small amount of oil and stir regularly.  While these are cooking, chop the roasted red peppers.  Once onions are getting close, add the red peppers and continue to cook.  Add the eggplant and continue cooking.  The process of getting the onions to the color of the photo takes far longer than I would have thought.  Add salt, pepper and 1 Tbsp red pepper flakes.  Add smoked paprika to taste.  I like a lot.  This was not in the original recipe but I love the addition.  

This is fantastic over rice, riced cauliflower, roasted cauliflower, and chicken.  

Wonder if this could be canned!!!
