Cast Iron Skillet London Broil

Ingredients:

2 - 3 lb London Broil
Salt
Pepper
Garlic Powder
Smoke Paprika
1 Tbsp Olive Oil
3 Tbsp Butter
2 Sprigs Fresh Rosemary

Directions:

Divide steak in 4 quarters. Season w/ salt, pepper, garlic, paprika. Wrap tightly and set out for 1 hour. 

Heat large cast iron skillet on medium high until hot.  Add olive oil.

Place steaks in skillet. Set timer for 3 minutes. DO NOT touch the steaks.  When timer goes off, flip steaks..  Set timer for 3 minutes.  Again, DO NOT move meat, but immediately add butter and Rosemary sprigs to skillet. Splash butter over steaks until timer goes off.  Remove rosemary.  Remove the skillet from the heat, tent with foil and leave for 5 minutes.  

Slice steak across grain and arrange on plate. Pour browned butter over slices and serve.
