Summer Salad with Vanilla Vinegrette

Ingredients:

Dressing:
1.3 C EVOO
3 Tbsp seasoned rice wine vinegar or vinegar of choice
1 tsp vanilla extract
1.2 tsp salt
1 Tbsp ground black pepper

Mix oil. vinegar, vanilla extract, salt, sugar and ground black pepper in small bowl with wire whisk until well blended.

Salad:
6 oz spring mix or arugula
8 oz mandarine oranges drained
2 cups strawberries washed and sliced
1 cup blueberries washed
1/2 cup toasted pecan or candied pecan pieces
Optional blue cheese or goat cheese crumbles

Mix remaining ingredients and toss with dressing. 

Serves: 
2 as a Dinner Salad
4 as a Side Salad
