Italian Stuffed Chicken

Ingredients:

5 Chicken Breasts - Butterflied and pounded flat    

Filling:
1 C Feta Cheese Crumbles
1 C Goat Cheese Crumbles
1 Tsp Italian Seasoning    
1/4 C Scallions - Chopped
1/2 C Fresh Spinach - Chopped
1 Clove Garlic - Minced 


1 C Marinara Sauce
Parmesan Cheese

Directions:

Preheat oven to 350 degrees

Butterfly and split chicken breasts.  Pound flat. 
Mix Filling and blend into a paste
Divide Filling paste in the center of chicken and fold edges.  Place chicken rolls seam side down in pan.
Bake covered for 30 minutes.  Pour Marinara Sauce over chicken rolls and bake another 20 minutes.

Serve with Pasta, or Zucchini Noodles
