Napa Slaw w/ Lemon Ginger Dressing
Ingredients:
8 C Napa Cabbage - very thinly sliced
7 oz. Chicken Breast - Cooked and shredded
1/2 C Slivered Almonds - Toasted
1 1/2 Tbsp Sesame Seeds - Toasted
3 Tbsp Basil - Fresh - Thinly sliced
3 Scallions - white and light green, thinly sliced.
Dressing:
2 Tbsp Lemon Juice - Freshly Squeezed
2 Tbsp Lite Mayo
1 tsp Ginger - grated fresh
Kosher Salt
Pepper
4-5 Tbsp Olive Oil - (Can use Sesame Oil as an option for a more Oriental flavor)
Directions:
In a large bowl, toss cabbage, chicken, almonds, sesame seeds, basil & scallions. Make dressing by whisking lemon juice, mayo, ginger and salt and pepper.
Drizzle olive oil while whisking until dressing is smooth. Toss in enough dressing until all the vegetables are lightly coated.
Serve immediately.
