Diane’s Famous Smothered Okra

Ingredients:

1 Tbsp bacon drippings
1 med onion - halved then thinly sliced
2 lbs okra - Cut off ends and stems. Slice in 1/2” pieces. 
1 1/2 tsp salt
1/2 tsp ground pepper
1/4 tsp ground cayenne 
1/2 tsp mace or nutmeg
1/4 tsp sugar
1/4 tsp chili powder
1 16 oz can diced tomatoes
1 1/2 tsp stone ground mustard
1/4 tsp ground thyme 

Directions:
In heavy 4-5 qt pan. Sauté onion in bacon grease over med heat until lightly brown (15-20 minutes). Add Okra and sauté 15 minutes more, gradually adding salt, pepper, cayenne, mace, sugar and chili powder.  Add the tomatoes, and thyme and continue to sauté. Add mustard. Cover and simmer for 30 minutes.  
Serve hot as a side dish or cold as a salad. 
 
NOTE:  Our good friend, Diane Chapman, found this recipe somewhere in a newspaper.  It used creole mustard.  I prefer stone ground and have been known to be heavy handed on adding extra.  If you have never tried okra, this is the recipe for you.
