Crustless Quiche
Base:
- 10 large eggs 0 Pts
- 1 1/2 cups Silk unsweetened Almond Milk 1 pt
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Add on options:
- 8 slices Canadian Bacon cut in thin strips 4 pts -or-
- 1 C Crab Meat -or-
-
1/2 c Kirkland Real Bacon Crumbles 7 sp and/or
Publix Crumbled Goat Cheese 10 sp -or- - 5 Pieces Light Babybel Semi Soft cheese course grated 7 sp and/or
- Shredded Smoked Gouda, etc. and/or
- Chopped fresh Spinach 0 sp and/or
- Onion - chopped 0 sp and/or
- Fresh Broccoli chopped 0 sp and/or
- Fresh Asparagus- sliced 0 sp
- Fresh Mushrooms - sliced thin 0 sp
Directions:
Arrange a rack in the middle of the oven and heat to 375°F Spray a 9” x 13” pan.
Beat eggs, almond milk, Salt & Pepper. Add options and pour into pan.
Bake for 45 minutes or until toothpick comes out clean.
NOTE: If you use fresh mushrooms and/or fresh spinach, add an egg or two to accommodate the moisture in fresh ingredients.
