Salmon Lettuce Boats


Ingredients:
8 Oz Smoked Salmon slices
1 Cup Green Mountain Farms (22 grams) Whipped Greek Yogurt Cream Cheese
1 Tbsp capers
1 Small tomato - Chopped
2 Tbsp Red Onion - Chopped
Romaine leaves - Use small,  tender, inner leaves. (Endive leaves would also work)

Directions:
Blend cream cheese, capers, tomatoes and onions well.
Smear Cream Cheese mixture down the center of a lettuce leaf.
Lay strips of salmon in the center of each lettuce leaf fold

Serves 4
Weight watcher - 2 smart points

NOTE:  This can be set up in buffet style for a guest breakfast.
