Cuban Mojo Marinated Skirt Steak
Ingredients:
2 lbs Skirt Steak - choose the narrow (outside) steak. 3” to 4” across
1/2 C Orange Juice
2 Tbsp Lime juice
6 cloves Garlic - minced
1 tsp ground Cumin
1 tsp dried Oregano
1/4 tsp red pepper flakes
2 Tbsp Soy Sauce
3/4 tsp Salt
Mix well. Marinate steak flat in a 9”x 13” pan for one hour. Turn after 30 minutes. Reserve marinade.
Steak Sauce:
Pour reserved marinade in a small pan. Bring to a boil and cook for 30 seconds to make it food safe. Transfer to a bowl.
Add:
1 tsp lime zest
1 tsp orange zest
2 Tbsp Lime juice
1 Tbsp Olive oil
Mix well.
Mix:
1 Tbsp olive oil
1 tsp Baking Soda
Drizzle over skirt steaks and spread over both sides of meat with your fingers.
Preheat grill on high heat. Turn off one burner. Lay steaks on hot side grill. Cook only for 2-4 minutes on each side. Remove to a plate cover with foil. Allow to rest for 10 minutes.
Slice on an angle and serve.
