Mississippi Pot Roast



Ingredients
  • One 3- to 4-pound boneless beef roast, your choice of cut 
  • 1 stick (8 tablespoons) butter 
  • 1 package au jus gravy mix 
  • 1 package dry ranch dressing mix
  • Pepperoncini peppers, 6-8 or more if you like, and a little juice
  • Salt and freshly ground pepper, if desired
Directions: 
Put the roast in a slow cooker. Add the butter, au jus gravy mix, ranch dressing mix and pepperoncini peppers and juice. Add salt and pepper if you like and cook on low until tender, about 8 hours.

Notes/Changes: 
I use 1/2 of the recommended butter, boullion instead of au jus packet mixed with 1 cup of water to make a bit of gravy, and also use double the peppers.  If you like it really spicy, you can also use spicy ranch packet.

This is a great go-to when you are feeding the masses. Serve with smashed potatoes. Yummy.
