Peach & Blueberry Crumble
Crumble mix
1 stick cold butter divided in cubes
1 C flour
1/3 C sugar
1/4 C brown sugar
1/4 tsp salt
1/4 tsp cinnamon
Fruit
2 lbs fresh peaches peeled and sliced thickly
1 C fresh blueberries
2 tsp lemon zest
2 Tbsp lemon juice
1/4 to 1/2 C sugar (depending on how sweet the peaches are)
1/4 C flour
Directions:
Put flour, sugars, salt and cinnamon in mixing bowl. Add cold butter and mix slowly until butter is the size of peas. Remove beaters and squeeze crumble mix with hands to blend.
Mix fruit, zest, juice, sugar and flour in glass bowl. Place fruit in ramekins. Sprinkle crumble on top of fruit.
Bake at 350 for 45 minutes
Serve with ice cream.

Note: Any mixture of fruit can be used. Apples, Pears, Raspberries, Cranberries, etc.
