Beth's Brunswick Stew
Ingredients:
1.5 lbs Ground Beef
0.5 lb Ground Pork
3 cups cooked chicken; I usually buy a rotisserie chicken
1 cup chicken broth
1 large onion chopped fine
1 – 24 oz bottle of ketchup
3 cans of petite diced tomatoes. I like tomatoes so may add one more
3 cans of yellow cream style corn
¼ cup vinegar
1-1 ½ tsp of red pepper flakes
Salt and pepper to taste
Directions:
Brown ground beef and ground pork-add onions while meat is cooking so the onion starts to cook and soften.
Put all ingredients in large crock pot, reserving ½ cup of the chicken broth for adding later if needed. Cook on low heat for several hours. If your crock pot has a “warm” setting use that after the first hour of cooking. Stir to make sure it does not burn.
If you do not have a large crock pot then put all ingredients in your largest pan or bowl. Mix the ingredients so that you can divide it among 2 smaller crock pots.
Note: This recipe really belongs to my friend Beth Burgess' mother-in-law, but Beth has made changes, so I am giving her authorship. "This makes enough to serve several people but if you want to increase it to serve a really big crowd then I usually add 2-2/14 # GB, 1 # ground Pork, 2 rotisserie chickens, 2 large and one small cans of tomatoes, 4 cans of the corn, little more onion,etc------you get the picture."
