Boudin Balls
Ingredients:
1 1/2 lb Boudin Sausage (removed from casing)
1 1/4 cup all purpose flour
3 eggs beaten
1 1/2 cup bread crumbs
2 cups vegetable oil
Directions:
Combine 1/4 cup flour with sausage.
Make a 1" ball of sausage.
Gently press 1 ball into flour mixture; shake off excess flour.
Roll in egg wash. Press in bread crumbs.
Place breaded ball on a plate.
Repeat the process until all sausage is used.
Cook boudin balls in preheated oil until they are crisp, golden and warm on the inside (3 to 4 minutes). Drain on paper towels.
Serve with Roumalade Sauce.
