Santa Fe Chili
Ingredients:
2lbs Ground beef
1 onion (chopped)
2 pkgs. Ranch style dressing (dry)
2 pkgs. Taco seasoning mix (regular)
2 16 oz can black beans
2 16 oz can red beans
2 16 oz can pinto beans (I used garbanzo beans)
1 16 oz can Rotel tomatoes with chilies Original style
1 16 oz can diced tomatoes
2 16 ox can white shoepeg corn
2 cups water
Sauté meat and onions. Drain. Add dry seasonings and mix well. Then add cans of ingredients, juice and all. Add water. Simmer for two hours. Garnish with sour cream, sliced green onions and grated cheese. This recipe makes one gallon and serves approximately 10.

Note: Had this soup at the McHaffie house. Loved it so much that i made it the next day. Because the taco and ranch seasonings have salt, I used low sodium beans. Can be frozen.
When I told Julie about this soup, she said she saw it made with diced Chicken. I'll have to try that!!
