Kale Salad

2 bunches kale - chopped
Craisins
Pine Nuts
Red onion - thinly sliced
Dressing:
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1/2 teaspoon of salt
Notes:
Other optional additions to the dressing include adding 1 teaspoon of chili powder OR 1 teaspoon of finely ground ginger root. It can be a little tart so you can add 1/2 tablespoon of honey to balance it if needed.
