Broccoli Salad

Ingredients:

1 head broccoli chopped small
6-8 slices cooked bacon chopped
1/2 cup red onion chopped
4 oz cheddar cubed very small
1/4 cup cherry tomatoes halved
1/2 cup raisins or craisins (optional)
1/4 cup cashews chopped (optional)

Dressing:
1/2 cup plain Greek yogurt
1/2 cup mayonnaise
2 tablespoons vinegar *
4 tablespoons sugar (I only used 2)
Salt & pepper to taste

*Various recipes use different vinegar options including white, red wine and apple cider.  I am going to try it with the coconut balsamic or pear balsamic.

Preparation:
Chop and combine.  Mix dressing ingredients and toss.

Notes:
This turned out really good.  It definitely requires more salt and pepper than you would think. I used the lesser amount of sugar and it turned out great.  I also used shredded cheddar instead of cubed just because it was what I had in the fridge.
