Coconut Pound Cake ala Patricia Ball


Ingredients:

5 eggs , separated
3 c. sugar
1½ c. Crisco, solid
1 c. milk
3 c. flour
½ t. salt
1 t. baking powder
1 T. coconut flavoring
1 T. butter flavoring*
1 small can coconut

* I used butter flavored Crisco and omitted Butter flavoring

Do NOT preheat oven.
Generously grease a 10” tube pan.
Beat egg whites until stiff; set aside. Cream Crisco and sugar; add egg yolks; add milk; mix. Slowly add flour, salt, baking powder; mix well. Add flavorings, coconut. Gently fold in egg whites. Pour into greased tube pan. Set in COLD oven, 325 degrees. Bake 90 mins or until done. Remove from oven and immediately wrap pan and cake in heavy duty foil. Let sit for 3 days before eating.


NOTE: This cake came from Scott's sister, Pat. I made it today for Scott's Birthday. Aging makes the cake richly dense. If your house is anything like mine, make the cake when no one is home and hide it for 3 days. Sorry Scott, today, you will have to settle for Key Lime Pie.
