Sugar & Spiced Pecans

Ingredients:
1 egg white
1 tbs water
1 lb Fresh shelled pecan halves (4 cups)*
2/3 C sugar
1 tbs fresh orange zest
1 tsp salt
2 tsp ground cinnamon
3/4 tsp ground ginger
3/4 tsp ground allspice
1/2 tsp ground coriander
2 dashes of ground cayenne pepper
Preparation:
Combine egg white and water and whisk until foamy. Pour over pecans. Gently turn to coat. Set aside. In plastic bag combine remaining dry ingredients. Add wet pecan to bag and shake to coat. Spread over foil line sheet in single layer. Bake @ 250 for 15 minutes. Reduce heat to 200 and continue to bake for 1 hour 15 minutes. Remove from oven. Cool and break apart.
*Editor's Note: Pecan pieces can be used ( great on salads, or as ice cream topping. This recipe is borrowed from Suzanne Rosenblum, a lady in my Mom's Quilt Guild. This year, Mom and one of her best buds, made Sugar & Spiced pecans to give as gifts. She ended up making another batch just for family.
It is best to put your sugar in a food processor to make it fine. Add fresh orange zest to the sugar. If you have any left, use it with hot tea. Love Mom
