Mango Mojito Salsa ala Paula Dean


Ingredients:

2 cups peeled, pitted, and diced mango
1⁄4 cup finely chopped red bell pepper
1⁄4 cup finely chopped red onion
2 tablespoons olive oil
1 1⁄2 tablespoons minced fresh mint
1 tablespoon fresh lime juice
1 tablespoon seasoned rice vinegar
2 teaspoons dark rum
1 1⁄2 teaspoons minced fresh cilantro
1 teaspoon peeled and finely chopped fresh ginger
1⁄2 teaspoon minced fresh garlic
1⁄2 teaspoon seeded and minced jalapeno chili pepper
1⁄2 teaspoon honey

Mix ingredients and let sit 30 minutes.

As you can see, this is not my recipe, but omg it's so good I had to save it for the future. Salsas seem to be a favorite of my family and friends and I am going to try to can this recipe. Will report on the results.
