Pizzelles

Ingredients:
6 Eggs
1 C. Butter
2 tsp. anise extract (pure)
4 C. All Purpose Flour
3 tsp Baking Powder
2 C. Sugar
Directions:
Sift flour and Baking Powder.
Beat the eggs until smooth.
Melt the butter in a small saucepan on low heat.
Allow the butter to cool slightly.
Blend and mix the sugar and anise into eggs.
Add melted butter and blend vigorously until smooth.
Spoon batter onto prepared pizzelle iron and close lid.Store in airtight container or bag.
Makes 150 pizzelles.
These light cookies are great with coffee or hot chocolate at Christmas.
