Sunrise Frittata

Ingredients:
12 Eggs
1/2 cup Milk
3 Tbsp. Yogurt
1/2 Cup Shredded Cheddar Cheese
1/2 Cup Shredded Romano Cheese
1/4 Cup Green Onion, diced
1/4 Cup Each Red & Yellow Peopper, diced
1/4 tsp. Salt & Pepper
1 Tbsp. oregano
2 Roma tomato, diced (optional)
6 Stems Steamed Asparagus, diced (optional)
Preparation:
Preheat oven to 360 degrees F. Generously spray a 6-count large muffing pan or 6-8oz. ramekins with cooking spray. In a large mixing bowl, combine eggs, milk, yogurt, cheeses, greenonion, bell peopper and seasonings and whisk until blended. Evenly distribute egg mixture in muffin pans or ramekins. Place in oven and bake for 30 minute.s Let cool in pan 5-10 minutes. Loosen firttatas from pan by running a knife around each frittata and remove carefully with a large spoon. For garnish, slice a roma tomato and top each frittata with a tomato slice; cut asparagus spears to 4 inches and insert int he center of tomato. Makes 6 Servings
