Ham Strata


Ingredients:
1 Cup Frozen O'Brien potates
2 Tbsp. Cooking Oil
3/4 Cup Seasoned Croutons
1/2 Cup Cheddar, grated
1/2 Cup Diced Ham
1/2 Cup Swiss Cheese, grated
1/2 Cup Pepperjack cheese, grated
6 Eggs
1 Cup Milk
Salt & Pepper

Preparation:
Soak croutons in 1/2 cup milk to soften (this can be done the day before). In medium skillet, fry potatoes with salt, pepper and oregano to taste, in oil until lightly browned. Heat oven to 350 degrees F. Spray four 8 oz. ramekins with oil to coat sides and bottoms. Layer potatoes, croutons and cheddar by evenly distributing in ramekins. Top with ham, swiss and pepperjack cheeses. In a small bowl, whisk together eggs, remaining 1/2 cup milk and salt and pepper to taste. Pour over layered mixture in ramekins. Bake for 30 minutes until puffed and lightly browned. Makes 4 servings.
