Baked Butter Beans with Mustard

Ingredients:
8 Slices Bacon
1 Large Onion (chopped, approx. 1 cup)
4 16 oz. cans Butter Beans and/or Great Northern Beans (rinsed and drained)
1 8 0z. container Sour Cream
1/2 Cup Chicken Broth
1 Tbsp. Dijon Style Mustard
1 Tbsp. All Purpose Flour
1/4 tsp. Ground Pepper
2 Tbsp. Fresh Italian Parsley
2 Tbsp. Fresh Rosemary
2 tsp. Finely Shredded Lemon Peel
Preparation:
1. Preheat oven to 325 degrees; Cook bacon & crumble. Save 1 Tbsp bacon grease; cook onions in bacon grease until tender, add beans and all but 2 Tbsp bacon and set aside.
2. In another bowl, wisk together sour cream, broth, rosemary, mustard and pepper. Stir into butter bean mixture. Transfer to 2 quart casserole dish. Bake covered 45 minutes, stirring once 1/2 way through.
3. In bowl, combine remaining backon, parsley & lemon peel. Sprinkle on beans before serving.
