Stuffed Beef Tenderloin
Ingredients:
Stuffing:
1 sm. pkg. herb seasoned stuffing
1 cup chopped onion
3-5 oz. pepperoni slices
2 eggs beaten
1 cup water
1/2 tsp. garlic powder
1/4 tsp pepper
7-7 1/2 lb. beef tenderloin
paprika
6 slices bacon
1 cup water
1 bay leaf
Gravy:
Drippings
1 1/2 tbs. cornstarch
1/2 tsp. pepper
Preparation:
Make stuffing. Slice tenderloin long ways. Place stuffing inside and tie closed. Lay slices of bacon over the top. Sprinkle with paprika. Pour 1 cup of water in roasting pan with bay leaf. Bake at 350 for ~1 hour. Make Gravy. Add pepper to drippings. Mix cornstarch with small amount of cold water until dissolved. Add to drippings. Heat if needed. Will thicken when it cools.
Notes:
Alternative to traditional Christmas dinner. If you like your meat more rare, cook the stuffing just before stuffing the meat. This way you don't have to worry if the egg is cooked completely.
