Scallops, Sausage, & Leeks

Ingredients:
Mild Italian Sausage
Bay Scallops
Leeks (look like big green onions)
Mushrooms
White Wine
Pasta (optional)
Shredded Italian Cheese Blend

Preparation:
In a large pan cook sausage. You can either cook them whole and then cut into slices or remove meat from casing and cook like ground beef. This is just a personal preference. Once the sausage is cooked through, add a small amount of white wine. Add leeks cut into ~1" lengths and mushrooms. Cook to desired texture. Add a little more wine. Add scallops until cooked. Add shredded cheese. Serve over pasta if desired.

Notes:
The amount of wine you add will be determined by desired serving style. Over pasta you will need more wine and cheese.
