Pina Colada Rum Martini

Ingredients:
2 Whole Fresh Pineapples
1.75 Liter Light Rum
1.75 Liter Coconut Rum (I prefer Cruzan but any will do)
Preparation:
Core and slice or cube fresh pineapples. Pour both light rum and coconut rum over pineapple. Yes, the whole bottle. Allow to sit for 3-5 days. Chill and serve. If too strong or you need the "lightweight" version, mix with DOLE- Orange, Peach, Mango Juice. The pineapple becomes a "chewable shot".
Notes:
If you turn the pineapples upside down for 24 hours before slicing the sweetness and juices will distribute more evenly. Won't really matter but a good note in general.
Eat the pineapple straight out of the container or use it in a blended drink. Watch out. The longer it sits, the more the pineapple flavor leaves the fruit and is replaced by straight rum. The tell tale sign is if it is pure white pineapple pieces. Those are probably best saved for the blender.
Beautiful to give as a gift or display for a party in a glass jar with pour spout. Layer the pineapple around outside of glass container. Leave open space in the center. The night before the party, freeze a bottle of water. Remove the water bottle label and place in the center of the container to chill on the way. This way you won't need a shaker. :) YUM! The hit of every party we've taken it to.
The idea for this came from one of our favorite restaurants at the beach, Mitchell's Seafood. They use Fresh Pineapple with Vodka. Since we aren't vodka drinkers, we decided to change it to rum. Though it was very good that first time around, it knocked me on my *ss! It needed a little more sweetness. I was going to add a little sugar but had some coconut rum and since pina coladas are a big hit on "Spiritual Sundays", I thought I would try it. It worked and is now considered perfected. ENJOY! Watch out, it can still sneak up on you.
