Key Limey Butter Cookies

Ingredients:
2 tsp. Key Lime Juice
1/3 cup Milk
1/2 cup Butter (softened)
3/4 Sugar
1 Egg
2 tsp. Lime Zest
1 3/4 cups All-purpose Flour
1 tsp. Baking Powder
1/4 Baking Soda

For Dusting:
1 tbs. Lime Zest
2 tbs. Lime Juice
1/2 cup Powdered Sugar

Preparation:
Preheat oven to 350. In a small measuring cup combine the lime juice with milk and let stand 5 minutes. In a large bow. cream together the butter and sugar until light and fluffy. Add egg, beating well to combine. Stir in milk/lime juice mixture. In a medium bowl, using wire whisk, stir together the flour, baking powder, and baking soda. Add dry ingredients to batter, blending well. Using teaspoon, drop mound of dough onto an ungreased cookie sheet. Leave space for cookies to spread slightly. Bake 8-10 minutes at 350 or until cookies are just beginning to brown on the edges. Cookies will remain pale on top. Remove and transfer cookies to baking rack to cool. Mix lime zest with powdered sugar using wire whisk. Sprinkle mixture over cooled cookies.

Notes:
The dough freezes well. Drop cookies on sheet and freeze. Pack in bags and bake as directed after thawing slightly.
