Grandmommy's Blue Cheese Dressing
Ingredients:
4 oz. block of blue cheese
2 tbs. oil (vegetable or canola NOT olive oil)
red wine vinegar
salt
pepper
dash of Worcestershire
Helman's Mayonnaise
Preparation:
Place cheese block and oil in a bowl and break up with fork. Add red wine vinegar, salt and pepper, and a dash of Worcestershire. Mix into mayonnaise.
Notes:
No one (Mom or Grandmommy...aka the only ones who know) will tell me exactly how much red wine vinegar since it is "until it looks right". So you may have to play with it. Less is better. I have had to go back and add another block of cheese because I added too much vinegar up front.
Only use Helman's Mayonnaise. If you use light it will be soupy in a couple days. The real (full fat stuff) keeps a good thick consistency.
