Cheesecake Factory - Pumpkin Cheesecake
Ingredients:
1 1/2 cups graham crackers
5 tbs. butter melted
1 cup + 1 tbs. sugar
24 oz. cream cheese softened
1 tsp. vanilla
1 cup pumpkin
3 eggs
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 allspice
whipped cream
Preparation:
Preheat oven to 350 degrees.
Crust:
Combine crackers and butter and 1 tbs. sugar. Don't over mix to paste 2/3 up the side of pan. Bake 5 minutes.
Filling:
Combine cream cheese, 1 cup sugar and vanilla. Mix until smooth. Add pumpkin, eggs, cinnamon, nutmeg, and allspice. Continue to beat until smooth. Pour in pan. Bake 60-70 minutes. Refrigerate after reaching room temperature. Once chilled, remove from pan. Cut with dental floss for a clean cut.
