Coconut Cake w/ Marshmallow Icing
Ingredients:
Cake:
1 Box of Yellow Cake Mix
1 Can Coconut Milk
3 Eggs
1/3 C. Vegetable Oil
Icing:
1 lb. Butter
1 Large Container Mashmallow Fluff
1 lb. Box Confectiuoners Sugar
2 tsp Clean Vanilla Extract
4 pkgs Frozen Fresh Coconut
Directions:
Cake: Mix all the ingredients and divide into 3 round (pre-greased and floured) cake pans. Bake until toothpick comes out clean. Set aside to cool completely. Level the tops of two of the cakes.
Icing: Beat butter until creamy. Add in the marshmallow fluff and continue to beat until well mixed. Slowly add the sugar, setting aside 1/4 cup of the sugar, add the vanilla. Beat until fluffy.
In a bowl, mix fresh coconut with reserved confectioners sugar.
Set one leveled cake on a pretty plate. Spread with icing and sprinkle fresh coconut on top. Add the second leveled cake layer and repeat with icing and coconut. Add the last layer of cake and frost all around. Press remainder of the coconut into the sides and top of the cake.
Sit back and enjoy the adjulation!
