Mad Cow Pulled Pork

Ingredients:
Pork Rump or Shoulder Roast(s)
Depending on your crowd I usually cook two roasts at a time in a very deep stainless steel pan
Caribbean Jerk Rub
1/2 Bottle Commercial Mojo Marinade
ANY NON-DAIRY LIQUID in your refrigerator.
Yes Anything!
Rub the roast all over with Jerk Seasoning. Place in large dutch oven fat side up. Pour Mojo Marinade over.
Now here comes the fun part....Go to your refrigerator and pull out all those almost empty bottles and pour the liquids over the roast until the liquid level comes half way up the roast. Remember, NO DAIRY!!!!!!!!!
Cover and bake: Fast - 300° for 5 hours -OR- Slow - 275° for 8 hours
Remove the bone and drain only half the liquid off and disgard. "Pull" the meat apart with two forks and let it rest in the juices. Serve on buns with cole slaw either on the side or on the bun.
I have used....
Colas (flavors don't matter),
Pickle juice (dill, sweet, bread/butter) It doesn't matter
Salad dressings use one or use them all,
Fruit juices,
Gator-ade,
Marachino cherry juice,
Caper juice,
Olive juice,
Wine
Remember, the fun is in the bragging. I make this late the night before and let it cook all night. After the feast, seal meat in portion sizes and freeze.
