Fried Chicken Cacciatore

Ingredients:
10 Piece Bucket O'Chicken (from your favorite Commerical Fried Chicken Place)*
2 tsp. Olive Oil
2 Cloves Garlic, chopped fine
1 Lg. Sweet Onion, chopped coarsely
1 Sweet Red Pepper, chopped coarsely
1 Sweet Yellow Pepper, chopped coarsely
1 Bay Leaf
1 Tbs Fresh Oregano
1 Tbs. Fresh Basil
1 tsp Sugar**
2 Lg (14.5 oz) Cans Crushed Tomatoes
1 Can Tomato Paste
1 Can Tomato Sauce
1 Jar Green Olives w/ Pimento, sliced or pieces
1 Lg Can Ripe Olives, pitted
Rice or Quinoa
Parmigiano Reggiano

Preparation:
In large pot, saute garlic, onions, peppers, and spices until vegetables are tender. Add tomatoes, paste and sauce and simmer for 30 minutes. Mix in Olives and stir to distribute.
Arrange the chicken in bottom or a large dutch oven. Pour tomato sauce mixture over chicken. Bake in 325° oven for 2 hours. Serve over Rice or Quinoa. Garnish with Parmigiano Reggiano

*The original recipe used Maryland Fried Chicken®. It was from a most dear friend who passed away too many years ago. I have used fried chicken tenders from the deli section of our grocer so my guests wouldn't have to deal with the bones. I tried Popeyes® chicken strips and they are delicious!

Serves 8 - 10

**A pinch of sugar will cut the high acid taste in any tomato recipe.
