Tarragon Chicken Salad
1 Whole Chicken*
1 Med Onion chopped fine
1 C Celery chopped fine
2 Hard Boiled Eggs chopped
½ tsp Mustard (I always have those little jars of fancy mustard I use for this salad)
¾ C Real Mayonaisse
3 Tbs fresh tarragon
Salt and Pepper
Options:
10 Red Seedless Grapes cut in ½
¼ C slivered almonds
Lettuce Leaves
Preparation:
Bone the chicken. Use both white and dark meat. (Reserve bones and skin to make stock for later.) Place chicken, onion and celery in a medium size bowl and add eggs, mix.
In a blender, combine mustard, mayonnaise and tarragon and blend until mixture turns green. Add to meat and vegetable mixture and blend well. Fold in options and serve on lettuce leaves. Also makes great sandwiches.
*Hint: Almost all grocers are selling roasted chicken in several flavors. For this recipe, I use the lemon pepper chicken. It is a wonderful time saver.
