Summer Salsa

Ingredients:
1 cup Pineapple Tidbits, drained or 1/4 Fresh Pineapple, chopped
1 Kiwi
1 Mango
1 Red Bell Pepper, Grilled, Skinned, and Seeded
1 (or 2 if you like the heat) Hot Chile Peppers, Seeded
1 small bunch cilantro (finely chopped)
1/2 Medium Red Onion (finely chopped)
Juice from 1 lime
Salt and Pepper (to taste)
Preparation:
1. Dice the fruits into small cubes or chop them small. Save the juices. Chop the red pepper, hot chile peppers and cilantro.
2. Combine all the ingredients and their juices. Mix well and add salt and pepper to taste.
3. Wash your hands! If oils from the chile pepper are still on your hands when you rub your eyes - well take it from someone who has been there - don't do it.
You can serve this salsa over fish or chicken or just with some tortilla chips. All the fresh ingredients make a perfect summer treat.
