Mom's Potato Salad


Ingredients:
8 - 10 New Potatoes (red skinned)
1 C Celery, diced
1 Med Onion, chopped
4 Eggs, hard boiled
1/2 C Sweet Pickle Relish or Salad Cubes
1 C Mayonnaise
2 Tbsp Mustard
Salt, Celery Salt or "Beau Monde Season"
Pepper

Preparation:
Making Potato Salad is truly a no brainer - Boil the potatoes either whole or sliced, skin on or off...however you prefer. I prefer to wash/scrub the potatoes and cook them whole, then cut them up in a big bowl, leaving the skins on. Chop onions and celery, hard boiled eggs and add to cut up potatoes, add relish, mayo, mustard.

Season to taste.

My family usually volunteers me to make potato salad. They prefer to eat it immediately while it's still warm and don't like it the next day. Either warm or cold this recipe came from "Grandmommy" and was a favorite of "Grandaddy".
